Honey Cake with Pecans

3 ounces (3/4c) pecans                                                                                                                       Unsalted butter –room                           temperature                                                                                                                                                  1-1/2 C flour, plus some for pan                                                                                                         1 cup raw honey, plus 2 to 3 Tbl more for glaze                                                                             1 C applesauce                                                                                                                                      3 large eggs, room temperature                                                                                                        ¾ tsp baking soda                                                                                                                               ¼ tsp salt                                                                                                                                              ¼ tsp ground ginger

Preheat oven to 3500.  Spread pecans (single layer) unto a baking sheet.  Toast in oven until fragrant, tossing a few times.  This will take 5 – 7 minutes.  Remove from oven and let cool.  Pulse pecans in food processor until finely chopped.  Set aside.

Butter and flour and 81/2 inch springform pan.  In a large bowl, combine honey and applesauce until honey is mostly dissolved.  Add eggs, and whisk until fully combined.

In another bowl, combine dry ingredients.  Stir in honey mixture.  Using a rubber spatula,  fold in the pecans.  Pour batter into pan.  Bake cake until golden brown on top (about 55 minutes).  Remove from oven and transfer to a wire rack to let cool.  Remove from pan and plate.  While cake is still warm drizzle the remaining honey on the top.  Serve warm.


Stone Ground Corn Bread

1 Cup white cornmeal from Three Sisters

1 Cup flour

1/4 cup Honey -Ellis Family Farms

1 tablespoon Baking Powder

1 teaspoon salt

1 Cup milk

1/3 cup vegetable oil

1 large brown egg-Ellis Family Farms

For a little kick, I add either fresh finely chopped green or red peppers or I purchase dried peppers from Genesis Growers.

Preheat the oven to 400.

Combine dry ingredients in one bowl, wet ingredients in another. Combine the two and mix until just blended. Pour into greased pan. Use and 8 x 8 pan if you like it fairly (2 to 3 inches) thick or 13 x 9 pan if you like it thin. My family prefers the thicker one. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Remove and serve while still warm.
